Choose Single Occupancy if you want to stay in a room by yourself in your own bed. Choose Double Occupancy if you'll be sharing a room and a bed with another attendee. Note that the villas and most bungalows have more than one bedroom so you may have shared common spaces, but will still have a private bedroom and bathroom.
